Sweeteners
Sweeteners, whether classified as natural or artificial, have long been prized for their mouth-pleasing ‘sugar’ taste, but they have many other functions in cooking and baking. Natural sweeteners are usually derived from sugar cane, sugar beet or corn syrup. Artificial sweeteners provide a ‘sugar’ taste without the calories, and may assist in weight management, prevention of dental decay and control of blood glucose for diabetics.

Nutritive sweeteners such as crystalline Fructose and Dextrose can be added directly to food products with ease.
Care should be taken with hot products (such as jam and sauces) to ensure the temperature does not drop significantly when sweeteners are added. This may cause problems with pre-gelation of other ingredients such as pectins.
Dextrose monohydrate should not be used at more than 12 – 15% in high sugar products as there is a risk it may crystallise and form white opague specs in the product.
Crystalline Fructose can be used to reduce the crystallisation in product such as glace fruit.
High intensity sweeteners such as Sucralose and Ace-K are easily added by preparing 5 – 10% solutions then adding the required amount.
