Essential Oils
Essential oils used in food products are made by one of two methods:
1. Steam Distilled Oils, made by injecting steam into the named herb or spice, then collecting the condensed liquid and separating the oil. Examples of steam distilled oils are peppermint oil, sage oil, and basil oil.
2. Cold Pressed Oils are made (usually from citrus fruits) by crushing the abraded skins with water, and separating the resulting oil/water mix.
