Cocoa Products
The most commonly used cocoa powders in the food industry are alkalised; where the cocoa kernel has been treated with an alkali such as potassium carbonate. Lightly alkalised powders have a milk chocolate flavour, while strongly alkalised powders have a characteristically dark chocolate flavour.
Flavour is also affected by the fat content of the powder. Standard cocoa powders contain 10 - 12% fat, while premium powders contain around 20 - 24% fat.

In order to ensure cocoa powder maintains its full flavour during its shelf life, it should be stored in a cool dry place, with no exposure to extreme heat. It should also be stored away from direct light or ultraviolet light and in a sealed bag.
Always ensure cocoa powder is not stored adjacent to odoriferous ingredients such as herbs and spices, as it may absorb these aromas.
Most cocoa powders will usually mix into water or milk systems. Lumping can be minimised by pre-mixing with sugar or a similar ingredient before adding to water.
