Bulking Agents
Bulking agents are commonly used to provide additional "bulk" or soluble solids, as a replacement for sugar or as an additional carbohydrate source in products such as sports drinks. Bulking agents can be classified into two broad groups; nutritive and non nutritive. Maltodextrins are an example of a nutritive bulking agent, while Polydextrose is an example of a non-nutritive bulking agent, having approximately only 25% of the normal calorific content of sugar.

Bulking agents are water soluble but often do not dissolve as easily as normal sugar when used in high concentration systems. Care should be taken when adding bulking agents to avoid any lumping or burn-on. We have found that mixing bulking agents with other ingredients (such as sugar) before adding to the mix may help in dispersion.
As bulking agents have very little inherent sweetness, other sweeteners such as Fructose or high-intensity sweeteners such as Sucralose may be required to achieve the desired taste.
