Buffering Agents
Buffering agents are used to adjust the pH of food product, usually from an acidic pH to neutral pH, particularly in beverage, fruit and savoury applications. This can be very important when used in conjunction with stabilisers such as pectins, where the use of a buffering agent will move the pH away from the region where undesirable gelation may occur.

While buffering agents are often best used as a solution they can in certain circumstances be added directly to food systems to achieve the desired pH. We have obtained good results by making a 25% solution of buffering agents and adding this to food systems while continuing to monitor the pH.
